Can You Eat Raw Potatoes? Are raw potatoes toxic?
The potato has several means of defense to counter the pests. The main means available are glycoalkaloids, toxic compounds. Called Solamine and Chaconine, these alkaloids are not lethal to humans but can cause serious side effects at high doses: vomiting, lower blood pressure, headache and even hallucinations and hemorrhages (retinal and gastrointestinal).
Fortunately for the greedy, these alkaloids are present only at low doses in potatoes and those found in the trade are absolutely safe for humans, whether they are consumed cooked or raw. Chaconine and Solamine are essentially concentrated in the skin and germs of the potato, which is not normally consumed.
